ANCHOVY PASTE
One thing we’ve learned from three decades of formulating with anchovy is how it can be incorporated into dressings, sauces and dips to enhance Mediterranean cuisine with Caesar-inspired products. Our Certified Savory anchovy products are cured for a minimum of six months, to enhance their freshest qualities and minimize fishiness.

Sokol’s culinary experts find the perfect balance between flavors with fish sauce ingredients and are well-versed in telling when undesirable fermented flavors become apparent.

Naturally occurring amino acids—like glutamate—deliver a desirable umami taste in fish sauce. In fact, the umami components in fish sauce make it taste “salter,” requiring less salt to reach an ideal taste level. The protein in fish sauce also helps expedite browning in fried or grilled foods, for perfectly cooked umami cuisine.
USAGE & APPLICATION
Dipping sauces and marinade recipes typically call for about 10% fish sauce, which may also improve browning on the grill or in the pan. Our Certified Savory fish sauce powder can be added to a dry seasoning blend or marinade rub. Use it as an umami enhancer in sensitive wet applications, for a desirable fish sauce flavor and odor.
